Salads

I used to see salads as a boring but necessary evil for people watching their weight. However, I've come to legitimately love and even crave salads . Turns out people aren't always lying when they say "mmmmm, salad". 

The key is that the salad has to be more than just some iceberg lettuce and dressing. In other words, not plain. It should have a lot going for it and flavors/ingredients that complement each other.

Some of my faves to make at home:
Greek salad...mixed greens with red onion, Greek olives, feta cheese, tomatoes, and cucumbers. Topped with a Greek Vinagrette dressing.

Southwest Chicken Salad....coleslaw mix (yes. Coleslaw mix. That comes in a bag with shredded lettuce, cabbage, carrots etc. It makes a great crunchy salad) with corn, black beans, tomato, shredded chicken, onion, maybe some avocado. Topped with chipotle-lime dressing (Market Pantry brand at Target has a delicious one). 

Strawberry poppyseed salad....baby spinach is best, with strawberries, red onion, blue cheese, and walnuts. Topped with a poppyseed dressing.
